Juice Detox!!! ♡♡♡ I have just come off an incredible juice cleanse and wanted to share my story! This is the second time this year I have completed a cleanse. The first was three months after my pregnancy. Day 1 was horrible without caffeen but i started to pick up each day. By the 4th day I was full of beans and bouncing off the walls. My body was happy and finally clean from all the toxic drugs needed to sustain my complicated pregnancy. I have not touched soft drink, coffee or caffeen of any sort ever since! (For those who know me, this is a BIG deal!!) As a bonus I dropped 4kgs! The 2nd cleanse was to finish what I started. I wanted to reset some bad habits and it has worked already! I feel motivated, strong and even started clinical Pilates, something ive been putting off for months. Infact I felt so good I juiced for 8 days instead of 5! I am officially down to my pre-baby weight after loosing another 2.5kgs! My body feels hydrated, nourished, clean and strong. 15 minute vegan sausage and bean stew ♡ Ingredients: 1 packet of vegan sausages 1 tin of 4 bean mix 2 stalks of celery- chopped 1 onion- diced 3 handfuls of baby spinach 2 tins if crushed tomatoes 1 tin of baby peas 3 teaspoons of dried thyme 2 teaspoons of red curry paste 2 table spoons of maple syrup Juice of one lemon 2 tablespoons of soy sauce 2 teaspoons of crushed garlic Method: 1. Chop sausage and onion. Add to large soup pot with garlic. Fry for 5 minutes. 2. Add celery, cook for a further 2 minutes 3. Add all other ingredients except spinach and stir for 5 minutes. 4. Add baby spinach last and cook for remaining 3 minutes. Enjoy!! Serve with rice or enjoy as is! Pumpkin & spinach gnocchi ♡ Ingredients:- 1 cup of cashews-soaked overnight or 1/2 hour before 2 cups of butternut pumpkin-diced 10 sundried tomatoes 200grams of button mushrooms 2 teaspoons of nutritional yeast 1 sachet of tomato paste or tablespoons 1 teaspoon of turmeric 2 teaspoons of origano 3 handfuls of baby spinach 2 teaspoons of olive oil 1/2 white onion-diced 300grams of potato gnocchi 1 cup of water 2 cloves of garlic-chopped 1 or 2 cups of vegetable stock Pumpkin:- Add diced pumpkin to tray. Drizzle with olive oil and origano. Cook for 20 minutes until slightly tender at 180. Set aside Cashew cream:- Blend- Cashews, water, nutritional yeast and tomato paste.(Add more water if too thick) Set aside Gnocchi:- Bring water to the boil. Add gnocchi and cook until it rises to the surface. (Approx 2 minutes) Drain and add to fry pan. Final step:- 1. While gnocchi is cooking add onions, mushroom, garlic and olive oil to pan. Cook until onion begin to change colour (Approx 2 minutes) 2. Add gnocchi and fry until golden brown (Approx 5 minutes) 3. Add spinach, pumpkin, sundried tomatoes and cashew cream. 4. Add vegetable stock until desired thickness. Cook a further 10 minutes. I have included pictures of all the steps. Creamy polenta & mushrooms ♡ ☆ Polenta- Tradionally made from corn meal. A low carb food rich in Vitamin A and C ☆ Ingredients: 1 cup of Polenta 2 teaspoons of vegan butter 200 grams of button mushrooms 200 grams of shiitake mushrooms 4 cloves of garlic- chopped 2 cups of red wine 2 teaspoons of corn flour 1 teaspoon of rosemary 1 teaspoon of oregano Polenta: Method 1. 3 cups of water. Bring to boil. Add 1/2 teaspoon of salt 2. Reduce heat and add 1 cup of Polenta. Stir on low for 10 minutes. Add extra water to keep to desired consistency. 3. Once cooked : Add two large teaspoons of vegan butter to polenta for creamy texture. Mushrooms: Method 1. Chop 200 grams of shiitake mushrooms and 200 grams of button mushrooms. Set aside. 2. Chop 4 cloves of fresh garlic and add to pan with two teaspoons of olive oil. Then add mushrooms and cook until mushrooms start to sweat. Approximately 5 minutes. 3. Add 2 cups of red wine and one teaspoon of dried rosemary and oregano. 4. Into a large container or cup add one cup of water and 2 teaspoons of corn flour. Stir until thickened evenly then add to pan. 5. Cook corn flour mix, red wine, spices and mushrooms on low for 10 minutes. Add extra water if needed to keep to desired thickness. Quick and easy family Sushi! Sushi kits! The best way to introduce sushi to the family without lengthy preparation! I also cheated and purchased marinated tofu and chicken style tofu fillets as I know the kids love them both! Method: 1. Cook rice provided in kit or 1 1/2 cups of aborio rice. Cook until tender and add vinegar sachet provided in kit. Set aside 2. While rice is cooking thinly slice vegetables of your choice and set aside. 3. Pan fry tofu for 10 minutes. Slice and set aside. 4. Following instructions in on how to roll out sushi. That's it! Quick tips: 1. Always cover sushi matt with a few layers of cling wrap to stop sticking. 2. Always have a bowl of water for your fingers as rice is sticky. I'll make a video on how to prepare and roll sushi ASAP! It's so satisfying! Red Goes Faster! It's been a huge week for us and to top it off we spent 5 hours on the road today! I was craving something sweet, hydrating and needed to ease my weary muscles. ☆ Pinapple☆ Loaded with nutrients. ☆ Slow cooked chickpea & cauliflower stew ☆ Ingredients: 1 yellow onion-diced 2 teaspoons of crushed garlic 1 tomato chopped fine 1/2 red onion -diced 1 sachet of tomato paste (two tablespoons) 2 teaspoons of curry powder 1 teaspoon dried coriander 1 teaspoon dried thyme 1/2 teaspoon cumin 1/2 teaspoon turmeric 2 cans of chickpeas (rinced and drained) 1 cup of dried red lentils 1 red capsicum- diced 1 green capsicum- diced 1 whole cauliflower -chopped roughly 3 cups of water 1 tablespoon white wine vinegar 1/2 cup of frozen peas 1/2 cup of frozen corn 1 tin of coconut cream 2 white potatoes- diced Method: 1.Pan fry onions, garlic, tomato paste and all the spices together. Add to slowcooker. 2. Add chickpeas, tomato, potato cauliflower, capsicum, lentils and water. Cook for 5 hours on low.. 3. Lastly add coconut cream, peas, corn and white wine vinegar and cook for another 45 minutes to one hour. Add salt and pepper to taste and serve with your favourite rice. Home made creamy hummus! Into food processor: 1 tin of chickpeas-rinced and drained 2 tablespoons of olive oil 2 small cloves of fresh garlic 1/2 teaspoon of salt 2 teaspoons of Tahini Juice of one whole lemon 6 teaspoons of water (or more until at desired thickness) Blend! Garlic, olive and tomato pasta bake! Ingredients: 250gram packet of pasta 15 olives 6 to 8 cloves of fresh garlic 2 punnets of cherry tomatoes 2 teaspoons of olive oil 1/2 teaspoon of dried parsley 1/2 teaspoon of dried origano 1/2teaspoon of dried thyme 1 jar of tomato pasta sauce Method: 1. Place cherry tomatoes, olives and peeled fresh garlic onto a lined baking tray. Drizzle with olive oil and herbs. Mix to ensure all ingredients are coated with oil and herbs. 2. Bake in the ovan for 1 hour at 180 degrees. 3. While waiting for the ovan, cook pasta of choice until al dente and set aside. 3. Add pasta, olives, tomato and garlic to a baking dish. Stir and cover with pasta sauce. 4. Sprinkle with vegan cheese of choice. Bake for further 15 to 20 minutes until cheese has melted through. Yummy 15 minute fried rice! Ingredients: 2 tablespoons seaseme oil 2 spring onions 1 cup of diced carrots 1 cup of diced beans 2 teaspoons of crushed garlic 2 tablespoons of soy sauce 1/2 teaspoon of salt Pepper to taste 2 cups of white rice Method: 1. Dice carrots and beans into tiny pieces. Set aside 2. Chop spring onions. Keep white of onion and green ends seperate. Set aside 3. Bring to the boil a medium pot of hot water. Add 2 cups of white rice and cook until tender. Approximately ten minutes. 4. While rice is cooking... Into large frying pan or electric frying pan add seaseme oil and wait 1 minute until oil is hot. 5. Add in white ends of spring onion, carrots and garlic. Cook stiring for 2 minutes. 6. Add beans and cook mixture a further 5 minutes. Turn down to low and prepare rice. 7. Rince rice with hot water and drain. Add rice straight into frying pan . 8. Stir mixture on high heat. Add soy sauce, salt, pepper and green ends of spring onion. Stir regularly. Taste and further season with more soy sauce until at favourite fried rice flavour. Cook for 2 minutes and your done! Freezes well and is a perfect side dish for meal prep! Frozen berry dessert ♡ My kids LOVE this as a simple snack of after dinner dessert! Ingredients: 2 bananas- frozen or fresh 1 cup of frozen berries 1/2 cup frozen strawberries 1/2 or 1 cup of frozen mango Coconut water. 1. Put all ingredients into a nutribullet or blender. 2. Pour in coconut water until marked line (enough to cover most the fruit) approx 2 cups. 3. Blend then put into a container and freeze. Quick tip: If you have a heap of bananas getting old, peel them, cut in half and store in a container in the freezer. Grab some out any time you want to make a cold smoothie or a berry dessert! Refreshing Hangover Cure! I love this drink for a nice kick start after enjoying wines on the weekend. It has plenty of greens without the green taste! Beetroot is a great source of nutrients. High in Vitamin C and fibre and has a delicious sweet taste. Ingredients : 2 fresh beets-cut off either end 1 whole celery - about 12-14 stalks 1 small thumb of fresh turmeric 12 apples 2 handfuls of spinach 1 full head of kale If you like a super smooth drink I reccomend straining this into your bottles. I just drink it straight from the juicer! Makes almost 2 litres. Will keep in fridge for 24 hours and best served ice cold! Deliciously Easy Coconut Curry! This is a staple family favourite! Ingredients: 2 cans of coconut cream 1 cup of frozen peas 1 cup frozen corn 2 carrots- diced small 1 onion- diced small 1/2 red onion-diced small 3 small white potatos-diced small 1 small sweet potato- diced 1 broccoli ( approx 3 cups) 2 teaspoons of crushed garlic 1 teaspoon turmeric 2 teaspoons red chili paste 1 teaspoon oil 1 lime Method: 1. Electric fry pan- Add oil, garlic and onions. Fry until onions change colour. Approx 3-4 minutes 2. Add carrots, potato, sweet potato, turmeric and chili paste. Cook for 15 minutes to soften potatoes. Stir continuously. 3. Add 2 tins of coconut milk, chopped brocoli, peas, corn and simmer for 10-15 minutes. Squeeze fresh lime juice over the top when serving! Enjoy! Mushroom Gnocchi Ingredients: 1/2 teaspoon of turmeric 1/2 cups of water 1 cup of soaked cashews (soak overnight or one hour before dish) 4 extra large mushrooms 10 sundried tomatoes 2 sachets of tomato paste or 4 tablespoons 2 tablespoons of nutritional yeast 3 large handfuls of fresh spinach 1kg of Gnocchi or 350grms of pasta. 1 tablespoon of vegan butter Method: 1. Cut mushrooms in half and then into 1cm slices. Add onion and mushroom to fry pan with peanut oil. Cook for 5 minutes until mushrooms change colour. 2. While mushrooms are cooking, blend cashews into 1.5 cups of water until smooth consistency (My blender died mid way through so not as creamy as i would like but still delicious!) 3. Add vegan butter, tomato paste, garlic powder, turmeric, nutritional yeast , sundried tomatoes, salt and pepper. Stir and simmer for 5 minutes. 4. Lastly add three generous handfuls of spinach. Mix and simmer until spinach begins to shrivel. Pour over gnocci or pasta of your choice and serve with fresh coriander.
