Home made creamy hummus! Into food processor: 1 tin of chickpeas-rinced and drained 2 tablespoons of olive oil 2 small cloves of fresh garlic 1/2 teaspoon of salt 2 teaspoons of Tahini Juice of one whole lemon 6 teaspoons of water (or more until at desired thickness) Blend! Yummy 15 minute fried rice! Ingredients: 2 tablespoons seaseme oil 2 spring onions 1 cup of diced carrots 1 cup of diced beans 2 teaspoons of crushed garlic 2 tablespoons of soy sauce 1/2 teaspoon of salt Pepper to taste 2 cups of white rice Method: 1. Dice carrots and beans into tiny pieces. Set aside 2. Chop spring onions. Keep white of onion and green ends seperate. Set aside 3. Bring to the boil a medium pot of hot water. Add 2 cups of white rice and cook until tender. Approximately ten minutes. 4. While rice is cooking... Into large frying pan or electric frying pan add seaseme oil and wait 1 minute until oil is hot. 5. Add in white ends of spring onion, carrots and garlic. Cook stiring for 2 minutes. 6. Add beans and cook mixture a further 5 minutes. Turn down to low and prepare rice. 7. Rince rice with hot water and drain. Add rice straight into frying pan . 8. Stir mixture on high heat. Add soy sauce, salt, pepper and green ends of spring onion. Stir regularly. Taste and further season with more soy sauce until at favourite fried rice flavour. Cook for 2 minutes and your done! Freezes well and is a perfect side dish for meal prep! Deliciously Easy Coconut Curry! This is a staple family favourite! Ingredients: 2 cans of coconut cream 1 cup of frozen peas 1 cup frozen corn 2 carrots- diced small 1 onion- diced small 1/2 red onion-diced small 3 small white potatos-diced small 1 small sweet potato- diced 1 broccoli ( approx 3 cups) 2 teaspoons of crushed garlic 1 teaspoon turmeric 2 teaspoons red chili paste 1 teaspoon oil 1 lime Method: 1. Electric fry pan- Add oil, garlic and onions. Fry until onions change colour. Approx 3-4 minutes 2. Add carrots, potato, sweet potato, turmeric and chili paste. Cook for 15 minutes to soften potatoes. Stir continuously. 3. Add 2 tins of coconut milk, chopped brocoli, peas, corn and simmer for 10-15 minutes. Squeeze fresh lime juice over the top when serving! Enjoy! Chili noodle soup! Ingredients: Table spoon coconut oil Large block if extra firm Tofu 2 packets of rice noodles 1 red and 1 green capsicum 1/2 red onion 1 small white onion 2 or 3 teaspoons red chili paste 4 cups of Vegetable stock 2 Bok choi 1 cup cashews 2 teaspoons crushed garlic 2 tablespoons soy sauce 1 can coconut milk Salt and pepper Method: 1. Cut Tofu into small cubes 2. Add coconut oil to pan. Add tofu evenly. 3. Turn only once when brown on one side. About 8 minutes per side. While tofu is cooking..... 1. To large saucepan add diced onion, garlic and chili paste. Cook until onion is transparent. 2. Add stock, coconut milk, diced capsicums, noodles, cashews, soy sauce and cook for 10 minutes. 3. Add chopped bok choi and crispy tofu. Cook a further 10 minutes on low. Salt and pepper to taste Enjoy! Recipe inspiration from "Pick up Limes" website. Check her out. Amazing woman!
