Sunday brunch is one of my favorite weekend activities! I usually head over to one of my go-to brunch spots, but today I decided to whip up my own delicious brunch at home! This shakshuka did NOT disappoint, recipe below inspired by @weeknightbite
I sautéed some onions, garlic, Swiss chard and bell peppers. Once browned, I added some roasted tomatoes. I formed two small pockets to crack the eggs into and then covered the pan and baked for 5 minutes. I topped it with some feta cheese, cilantro and avocado and paired it with a @sietefoods cassava flour tortilla.
