Have you ever made spatzle? I used to have a Hungarian friend and she would make them for me as a special treat. She is long gone but today I made this in her memory. Recipe below. Be careful not to add too much flour, the dough should be soft, more like batter. Here is how to make it: . 1 cup flour . A bit of grated of nutmeg . 1 teaspoon salt . 2 eggs . 1/4 cup milk . Combine flour, nutmeg and salt in a bowl. . Whisk eggs and milk in another bowl. . Add eggs to flour and stir with a spatula, scraping side of the bowl, creating a sticky dough resembling thick batter. . Bring a pot of water to a boil, add a tablespoon of coarse salt. . Grate the spatzle over the boiling water using a coarse heater or a spatzle maker (swipe to see image). As soon as they float to the surface they are ready, remove to a plate. . Heat butter or oil in a pan, add spatzle and cook until some are golden, or leave them lighter. .
