Inspired by @cookinglight recipe for Braised Leeks, I tweaked their method slightly by adding Organic tri-color Carrots.
I then charred the Leeks and Carrots lightly for flavor. The recipe calls for braising the Leeks in white wine and chicken or vegetable stock with fresh thyme, cracked pepper and sea salt.
In just about 12 minutes, the Leeks soften to an Al dente noodle like consistency and have a rich fried onion/roasted garlic flavor. Combined with the sweetness of the braised carrots, they were delightful. The pan sauce was then reduced and mounted with butter.
I served the Braised Leeks and Carrots around some smashed Redskin Potatoes and pan-seared Herbed Chicken tenders, all topped with the pan gravy; rich with the wine, butter and herbs.
This is one of those meals I just had a great time prepping and cooking - charring the vegetables and the braising, the bright colors and wonderful aromas. I love cooking.
