Evening everyone ☺️ busy day today and wrapping it up with a good old tofu scramble which I’ve not made for ages for some reason. However was just as good as it always is and very much enjoyed 😋 in this one I used @tofooco (the best tofu out there by miles), turmeric, paprika, nutritional yeast, black pepper, red onion, broccoli , mushrooms, some toast and all topped with some @myproteinuk bbq sauce! Hope you all have a lovely Saturday ☺️

Creamy Vegan Roasted Cauliflower Soup 🥣😍 Via @elavegan Recipe:⠀ Ingredients⠀ 1 medium head cauliflower about 1 1/2 to 2 pounds⠀ 1 tbsp oil⠀ 2 cloves garlic, minced⠀ 3 cups vegetable broth (720 ml)⠀ 1 cup plant-based milk (240 ml)⠀ 1/3 cup soaked cashews (50 g) (*see recipe notes)⠀ One 15 oz can cannellini beans drained and rinsed⠀ Spice mix: 1 tsp onion powder 1/2 tsp paprika, 1/2 tsp sea salt (or less/more to taste), 1/2 tsp ground oregano (or thyme), black pepper to taste⠀ 1 tbsp fresh lemon juice or lime juice⠀ Fresh parsley for garnish⠀ ⠀ Instructions⠀ Soak cashews for a couple of hours or boil them for 15 minutes in water until they are soft.⠀ Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).⠀ Cut the cauliflower into florets, spread on a baking tray (lined with parchment paper) and drizzle with 1 tablespoon oil and a little salt. Toss with your hands and roast the cauliflower in the oven for about 30-35 minutes until nicely browned and tender. Set aside a few cauliflower florets for garnish.⠀ In a blender, combine all ingredients (add the broth & milk in batches if necessary) and blend until completely smooth.⠀ ⠀ Taste the soup and adjust seasonings. If you prefer a spicy soup, add some hot pepper flakes!⠀ If the cauliflower soup is too thick (it does get thicker as it sits), add a little bit more broth or plant-based milk and blend again.⠀ Transfer to a pot and warm to the desired temperature.⠀ ⠀ Garnish with fresh parsley and the reserved cauliflower florets. Here's the recipe for the banana bread I made some weeks ago! 🍌3 ripe bananas 🍌140g flour (I used spelt) 🍌1 tsp baking powder 🍌100g almond butter (I used almond) 🍌1 tsp cinnamon 🍌1/2 tsp vanilla extract 🍌chia egg: 2 tbsp chia seeds, 6 tbsp water (leave for 10 minutes) 🍌optional: I had some leftover chocolate, so I melted it and topped the bread with it before baking. You can also mix nuts, dried fruit or chocolate into the batter. Mix it all together (I used a spoon, it took a while) and bake at 180° Celsius for around 40 minutes. Crack Cookies 😋 Tag a friend who'd love this! ❤️ ⠀ Follow 👉@veganfitrecipes ⠀ Recipe Down Below 👇⠀ ⠀ About 25 salted crackers (like Ritz)⠀ 2 cups dairy free butter⠀ 2 tbsp water⠀ 2 cups soft brown sugar⠀ Pinch of salt⠀ 1 tsp vanilla extract⠀ Melted dark chocolate (about one bar’s worth)⠀ ⠀ Line a baking tray with baking paper, then lay out the salted crackers to form a base.⠀ ⠀ Melt the dairy free butter in a pan until liquified, then mix in the water, sugar, salt and vanilla.
